Breakfast: Cereal w Freeze Dried Raspberries
I kid you not, I am addicted to cereal. Not just any cereal- honey nut cherrios, honey bunches of oats and crumbled freeze dried raspberries!! Normally, my breakfast will be an egg, whole wheat toast, spicy hummus and maybe some sautéed veggies. Once my mom told me about her friend that did this with her cereal, I couldn't stop eating this. All you need is a neutral flavored cereal (not like cinnamon toast crunch), some freeze dried fruit like blueberries, raspberries, strawberries...etc (you can find these at Target or Trader Joes!), and milk of your choice.
I also LOOVE oranges, I eat like 3 a day, so I had those also. And on the weekend when I have the time, I like making a cup of jasmine green tea+honey+ginger+lemon.
Lunch: Sautéed Veggie Ramen Noodle Bowl
So here's the deal with me: if there are a bunch of veggies in the fridge, no meat and there is a very hungry Rachel in the kitchen, there will most likely be a veggie tofu ramen dish made. My go-to lazy meal is sautéing some veggies like carrot+mushrooms+bell peppers and tofu with a mix of any asian sauces you have (soy, sesame, sriracha, rice wine vinegar, fish sauce, sweetener...etc.); try this recipe! Then boil some ramen, I loved this brown rice ramen I got from Costco. Top it with a fried egg, lime, more sauce, more veggies and lunch is ready!
I. Love. Fruit.
If given the option, I would eat a giant bowl of fruit for breakfast, lunch and dinner. But I probably would not be kept full so instead, I eat a huge bowl of fruit for snack!!
The past few weeks my fruit bowl has consisted of oranges and kiwis and then every week another fruit- last week was blackberries, this week is mangos!!
During school, I normally have it around 10pm at break but on the weekends, normally around 3pm in between lunch and dinner. I only posted meals that were'nt "packaged" but I also have the chocolate belvita cookies, applesauce pouches and goldfish for snacks !!
Dinner: Hot Dogs w Peppers and Onions
There is no such thing as plain ol' hot dogs in our house. If you want to spice up your regular hot dog dinner try doing this!. Sauté some bell peppers, onions, mushrooms, bay leaf, salt, pepper, Worcestershire sauce, vinegar, red pepper flakes, garlic and a few other spices of your choosing! Cook for 5 minutes until the veggies are soft and a little brown, add a 1/4 cup water or chicken broth and cook on low with the lid covered.
Now for the hot dogs. On a large, heavy bottom pan, add some olive oil and grill your favorite hot dogs until brown and charred. Add a slice of cheese and cover with a lid until melted! Assemble your dog on a whole wheat bun with the veggies, mustard, sauerkraut and a pickle on the side!
