Spinach Walnut Pesto

I'm pretty sure pesto doesn't need any introduction. There has to have been at least one time where you took that costco size jar of green goodness out of your fridge and threw together a really lazy pasta or put it on a sandwich or had it in a restaurant- my point is, EVERYONE knows what pesto is.

I wanted to make it a little different. The normal recipe for pesto is basil+parmesan+garlic+lemon+olive oil+pine nuts. Although, not everyone has access to pine nuts so I decided to replace them with toasted walnuts and add some spice for some extra healthy green goodness!

This pesto can be used like the original thing with pastas, sandwiches, salads or crackers! Watch my video down below to see the full tutorial. 

Spinach Walnut Pesto ​print

Makes Around 1 Cup

Ingredients: 
2 cups fresh baby spinach 
1.5 cups fresh basil 
​1/2 cup parsley 
1/2 cup parmesan 
2 garlic cloves 
1.5 tsp lemon juice 
3/4 cup toasted walnuts 
1/2 cup olive oil 
1/2 tsp salt

Directions: 
Blend all ingredients together except olive oil. While blending in a food processor, slowly dribble in the oil. Store in an air tight container in the fridge. Serve with crackers, pastas, salads or sandwiches.
