Mexican Hot Chocolate Molten Lava Cakes

I really don't know what is more satisfying than a big spoonful of gooey chocolate cake with melted chocolate dripping down your spoon. The iconic Valentine's Day dessert with a spin! I have always loved the idea of chocolate and spice and felt this was the perfect opportunity to jazz up the traditional lava cake!

My mouth is actually watering at the oozing center. If you're intimidated of the use of chili in this recipe, don't be! It's a nice warming taste that you can of course add less of if you are not a big fan of heat. The cinnamon and chili perfectly balance out the rich, sweet chocolate making it a go to dessert!

Mexican Hot Chocolate Lava Cakes print

Makes 2 Lava Cakes
Ingredients:

Cake:
6 oz good quality semi sweet chocolate
3 oz unsalted softened butter (plus extra for ramekins) 
2 large eggs (at room temperature) 
1/4 cup granulated white sugar
1/4 cup all purpose flour (plus extra for ramekins) 
1 tsp pumpkin pie spice
1/2 tsp ground cinnamon 
1/2 tsp cayenne/ chilli powder
1/4 tsp salt
1 tsp vanilla extract

Extras: 
vanilla ice cream/ whipped cream 
berries 
chili powder
cinnamon sticks

Directions:
  1. Preheat your oven to 400 degrees Fahrenheit 
  2. Using a double boiler (a small pot of boiling water with a heat proof bowl sitting on top) melt your chocolate and butter. Keep the flame on low and once the chocolate starts to melt, mix with a spatula until smooth and glossy. 
  3. In a big bowl, beat together your eggs and sugar until it’s frothy. Slowly add in your flour to prevent any lumps. Once mixed, add in your spices, vanilla and chocolate. Combine thoroughly. 
  4. Prepare your ramekins by coating them with the butter and shaking around the flour. Remove any excess flour. 
  5. Fill your ramekins with the lava cake mixture and tap to flatten the tops out. 
  6. Bake for 10-15 minutes until a toothpick inserted comes out coated in the chocolatey mixture! 
  7. Remove from the oven and let cool for 3-5 minutes then flip the cakes onto plates. Serve with powdered sugar, vanilla ice cream or whipped cream, berries, a sprinkle of chili powder and some cinnamon sticks. Eat hot and enjoy!
